Instructions

  1. Prep Your Ingredients: Slice your mushrooms, finely mince your fresh garlic, and grate your Parmesan cheese.
  2. Cook the Fettuccine: Bring a large pot of heavily salted water to a rolling boil. Add your fettuccine and cook according to package directions until it's al dente. Reserve about 1 to 1½ cups of starchy pasta water before draining.
  3. Sauté the Mushrooms: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add sliced mushrooms in a single layer and cook undisturbed for 3-4 minutes until golden-brown. Season with salt and pepper, then remove from the pan.
  4. Build the Garlic Base: In the same pan, reduce heat to medium, add 2 tablespoons of unsalted butter and another tablespoon of olive oil. Once melted, add minced garlic and sauté for 1-2 minutes until fragrant.
  5. Deglaze with Broth: Pour in ½ cup of chicken or vegetable broth and scrape up browned bits from the pan. Let simmer for about 1 minute until it reduces slightly.
