Garlic Chicken Broccoli Spinach: A Healthy and Delicious Recipe for Your Dinner Table

This healthy chicken dish features seasoned chicken breasts sautéed with vibrant broccoli and spinach, enhanced by garlic and onion. Finished with a splash of lemon juice and optional Parmesan cheese, it’s a quick, satisfying meal perfect for any weeknight.

  • 4 boneless, skinless chicken breasts
  • 4 cups fresh broccoli florets
  • 2 cups fresh spinach leaves
  • 4 cloves garlic, minced
  • 1 medium onion, diced
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1/2 teaspoon red pepper flakes (optional, for heat)
  • 1/2 cup chicken broth
  • 1 tablespoon lemon juice
  • 1/4 cup grated Parmesan cheese (optional)

Instructions

  1. Rinse the chicken breasts under cold water and pat them dry with paper towels.
  2. Season both sides of the chicken breasts with salt, black pepper, paprika, and red pepper flakes if desired.
  3. In a large skillet, heat the olive oil over medium-high heat. Add the seasoned chicken breasts and cook for about 5-7 minutes on each side until golden brown and cooked through (internal temperature should reach 165°F or 75°C).
  4. Remove the chicken from the skillet and cover with aluminum foil to keep warm.
  5. In the same skillet, reduce the heat to medium and add the butter. Once melted, add the diced onion and sauté for 3-4 minutes until translucent.
  6. Add the minced garlic and cook for an additional 1-2 minutes, being careful not to burn it.
  7. Stir in the broccoli florets and cook for about 5 minutes until they start to become tender.
  8. Add the fresh spinach leaves and cook for another 2-3 minutes until wilted.
  9. Pour in the chicken broth and lemon juice, stirring to combine. Let it simmer for 2-3 minutes.
  10. Return the chicken breasts to the skillet, spooning some of the vegetable mixture over the top.
  11. If using, sprinkle Parmesan cheese over the chicken and vegetables.
  12. Cover the skillet with a lid and let everything cook together for an additional 2-3 minutes.
  13. Plate the chicken first, then spoon the broccoli and spinach mixture over the top.
  14. Garnish with fresh herbs or a squeeze of lemon juice if desired.
  15. Serve with rice, quinoa, or a simple green salad.
