  1. Prepare Your Oven (The 'Forgotten' Part): First things first, preheat your oven to 350°F (175°C). While it's heating, prepare two large baking sheets by lining them with parchment paper. Once your oven reaches 350°F, immediately turn it OFF. Resist the urge to open the door until instructed!
  2. Whip the Egg Whites: In an absolutely clean, dry bowl of a stand mixer fitted with the whisk attachment (or using a hand mixer), combine your room temperature egg whites, cream of tartar, and salt. Begin whipping on medium speed until soft peaks form.
  3. Gradually Add Sugar: With the mixer still running on medium speed, slowly, a tablespoon at a time, add the granulated sugar. Once all the sugar is incorporated, increase the speed to high and continue whipping until stiff, glossy peaks form.
