Ingredients

  • boneless, skinless chicken thighs
  • ramen noodles

  • coconut milk
  • Thai red curry paste

  • low-sodium chicken broth

  • sliced green onions

Instructions

  1. In a large pot, heat a tablespoon of oil over medium heat. Add 4-5 cloves of minced garlic and sauté until fragrant, about 1 minute. Be careful not to burn it!
  2. Add 2-3 tablespoons of Thai red curry paste to the pot. Stir well, allowing the paste to bloom in the oil, about 2-3 minutes.
  3. Pour in 4 cups of low-sodium chicken broth and 1 can (400ml) of coconut milk. Stir until everything is well combined, bringing the mixture to a gentle simmer.
  4. Place your chicken thighs into the simmering broth. Cover and let it cook for about 20 minutes or until the chicken is cooked through and tender.
  5. Remove the chicken from the pot and let it cool slightly. Shred it using two forks, then return it to the broth.
  6. Cook your ramen noodles according to the package instructions in a separate pot. Once cooked, drain and set aside.
  7. To the broth, add sliced bell peppers, shredded carrots, and bok choy. Let them cook for about 5-7 minutes until tender.
  8. Add the cooked ramen noodles to the broth, stirring to combine everything well. Taste and adjust seasoning as needed.
  9. Ladle the ramen into bowls, ensuring everyone gets a good mix of chicken, noodles, and veggies. Top with fresh cilantro, lime wedges, and sliced green onions.
