- Preheat your oven to 350°F (175°C). Line a 15×10-inch jelly roll pan with parchment paper and lightly grease it.
- In a large mixing bowl, whisk together 4 eggs and 1 cup of granulated sugar until the mixture is thick and pale. This should take about 5-7 minutes.
- In another bowl, sift together 1 cup of all-purpose flour, 1/3 cup of cocoa powder, and 1 teaspoon of baking powder. Gradually fold this into the egg mixture using a spatula, being careful not to deflate the batter.
- Pour the batter into the prepared pan, spreading it evenly. Bake for 12-15 minutes or until the cake springs back when touched.
- As soon as it’s out of the oven, take a clean kitchen towel, dust it with powdered sugar, and carefully invert the cake onto the towel. Peel off the parchment paper and roll the cake up in the towel starting from one of the shorter ends. Allow it to cool completely.
- While the cake cools, whip 1 cup of heavy cream with 2 tablespoons of powdered sugar and 1 teaspoon of vanilla extract until soft peaks form. Gently fold in the chopped cherries.
- Once the cake is completely cool, unroll it gently. Spread the whipped cream mixture evenly over the surface, leaving a small border around the edges. Roll the cake back up (without the towel) and place it seam-side down on a serving platter.
- Whip additional cream for topping if desired, and spread it over the rolled cake. Garnish with more cherries and chocolate shavings for that elegant touch.
