Ingredients

  • Plain (All-Purpose) Flour
  • Unsalted Butter
  • Caster Sugar (Superfine Sugar)
  • Egg
  • Raspberry Jam
  • Desiccated Coconut
  • Caster Sugar

Instructions

  1. Preheat your oven to 180°C (160°C fan/350°F) and prepare a 20x30cm (8×12 inch) baking tin by greasing it and lining it with baking paper.
  2. In a large mixing bowl, beat the softened unsalted butter and caster sugar together until light, pale, and creamy, about 3-5 minutes.
  3. Crack in the egg and beat well until fully combined.
  4. Gradually add the sifted plain flour, mixing until a soft dough forms.
  5. Press the dough evenly into the base of the prepared baking tin.
  6. Optional: Pre-bake the base for 10-15 minutes until lightly golden around the edges.
  7. Spread the raspberry jam evenly over the base.
  8. In a separate bowl, whisk together the remaining eggs, caster sugar, and milk until well combined, then stir in the desiccated coconut.
  9. Spoon the coconut mixture over the jam layer, spreading it gently and evenly.
  10. Bake for 25-35 minutes until the coconut topping is golden brown and set.
  11. Let the slice cool completely in the tin on a wire rack before cutting into squares or rectangles.
