  • ⅓ cup Vegetable Oil
  • 1 teaspoon Vanilla Extract
  • 1 ½ cups Fresh or Frozen Blueberries
  • 1 tablespoon Lemon Zest (optional but highly recommended)

Instructions

  1. Preheat your oven to 375°F (190°C) and prepare your muffin tin by lining it with paper liners or spraying it with non-stick cooking spray.
  2. In a large mixing bowl, combine the cake mix, extra all-purpose flour, and optional granulated sugar. Whisk together until well-combined.
  3. In a separate medium-sized bowl, whisk together the room temperature eggs, milk, vegetable oil, and vanilla extract. If using lemon zest, add it here as well.
  4. Pour the wet ingredients into the bowl with the dry ingredients and gently fold them together using a spatula or wooden spoon until just combined. It's okay if there are a few small lumps.
  5. Gently fold in the fresh or frozen blueberries, being careful not to crush them.
  6. Divide the batter evenly among the 12 prepared muffin cups, filling them about two-thirds to three-quarters full.
