Ingredients

  • Spaghetti or penne pasta
  • Fresh ripe tomatoes
  • Zucchini
  • Extra virgin olive oil
  • Fresh garlic cloves
  • Fresh basil
  • Fresh oregano
  • Parmesan cheese or pecorino or nutritional yeast
  • Salt
  • Pepper
  • Red pepper flakes (optional)

Instructions

  1. In a large pot, bring salted water to a boil. Add your pasta of choice and cook according to package instructions until al dente. Reserve about a cup of pasta water, then drain the rest and set the pasta aside.
  2. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant, being careful not to burn it.
  3. Slice the zucchini into half-moons and add them to the skillet. Sauté for 3-5 minutes until they start to soften.
  4. Chop your fresh tomatoes or pour in the canned tomatoes. Stir well and let them cook down for about 6-8 minutes. The tomatoes should break down and create a nice sauce.
  5. Add in the dried oregano, salt, and pepper to taste. If you like a little heat, this is a great time to add a pinch of red pepper flakes.
  6. Add the drained pasta to the skillet. Toss everything together, adding reserved pasta water a little at a time until you reach your desired sauce consistency.
  7. Remove the skillet from heat and stir in chopped fresh basil. This adds a lovely freshness to the dish.
