  • 1 teaspoon chili powder
  • Pinch of cayenne pepper (optional)
  • 1/2 cup beef broth
  • 1 (28-ounce) can crushed or diced tomatoes (undrained)
  • 1 (13.5-ounce) can full-fat coconut milk
  • 12 teaspoons garam masala
  • Fresh cilantro, for garnish
  • Salt and black pepper, to taste
  • Oil (vegetable or canola) for searing

Instructions

  1. Prepare the Beef: Trim off any excessive fat from the beef chuck roast and cut it into roughly 1.5 to 2-inch cubes.
  2. Sear the Beef (Highly Recommended!): In a large skillet or Dutch oven, heat a tablespoon or two of oil over medium-high heat. Season the beef cubes with salt and black pepper, and sear on all sides until browned. Transfer the seared beef to your slow cooker.
  3. Sauté the Aromatics: In the same skillet, reduce the heat to medium and add more oil if needed. Sauté the finely chopped onion for about 5-7 minutes until translucent.
  4. Add Garlic, Ginger, and Spices: Stir in the minced garlic and grated ginger, cooking for another minute until fragrant. Add the ground cumin, ground coriander, turmeric powder, chili powder, and cayenne pepper. Cook for 30-60 seconds to bloom the spices.
  5. Deglaze and Transfer: Pour in about half a cup of beef broth, scraping up the browned bits from the skillet. Let it simmer for a minute, then transfer this mixture to the slow cooker with the seared beef.
  6. Add Remaining Liquids and Ingredients: Pour in the crushed or diced tomatoes and coconut milk into the slow cooker. Stir to combine all ingredients.
  7. Slow Cook: Cover the slow cooker and cook on LOW for 6-8 hours, or on HIGH for 3-4 hours until the beef is tender.
  8. Finish and Serve: Once the beef is tender, stir in the garam masala. Taste and adjust seasonings as needed. If the sauce is too thin, make a slurry of cornstarch and water, stir it in, and cook on high for another 15-30 minutes until thickened. Garnish with fresh cilantro before serving.
