  • 1 bunch of fresh asparagus
  • 1/2 cup freshly grated Parmesan cheese
  • 2 tablespoons mayonnaise or Dijon mustard

  • 1/4 teaspoon onion powder
  • A pinch of paprika
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 1 tablespoon olive oil
  • Fresh lemon wedges, for serving

Instructions

  1. Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
  2. Trim the woody ends off the asparagus and toss them on one side of the prepared baking sheet with about 1 tablespoon of olive oil, salt, and freshly ground black pepper, spreading them in a single layer.
  3. Pat the salmon fillets thoroughly dry with paper towels and place them on the other side of the baking sheet, lightly seasoning them with salt and pepper.
  4. In a small bowl, combine 2 tablespoons of mayonnaise (or Dijon mustard), 1/2 cup of freshly grated Parmesan cheese, 1/2 teaspoon of garlic powder, 1/4 teaspoon of onion powder, and a pinch of paprika. Mix until it forms a thick paste.
  5. Generously spread the Parmesan mixture over the top of each salmon fillet, ensuring an even layer.
  6. Transfer the baking sheet to the preheated oven and bake for 12-18 minutes, until the salmon flakes easily with a fork and reaches an internal temperature of 145°F (63°C), while the asparagus should be tender-crisp and slightly browned.
  7. For an extra crispy crust, turn on the broiler during the last 1-2 minutes of cooking, watching carefully to prevent burning.
  8. Remove the sheet pan from the oven and serve the salmon and asparagus immediately with fresh lemon wedges.
