Delicious Kielbasa Potato Soup: Hearty & Flavorful Recipe

Kielbasa Potato Soup is a cozy, hearty dish that combines savory beef kielbasa with tender potatoes for a comforting meal. Perfect for chilly evenings, this soup is both satisfying and nourishing.

Ingredients

  • Smoked kielbasa
  • Yukon Gold or Russet potatoes
  • Onion
  • Garlic
  • Carrots
  • Celery
  • Chicken or vegetable broth
  • Heavy cream
  • Thyme
  • Bay leaves
  • Black pepper
  • Olive oil

Instructions

  1. Start by chopping the kielbasa into bite-sized pieces, dicing the onion, and mincing the garlic. Peel and cube the potatoes, slice the carrots, and chop the celery.
  2. In a large pot, heat a tablespoon of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes. Then, add the minced garlic and cook for an additional minute, stirring frequently.
  3. Toss in the carrots and celery, cooking for another 2-3 minutes until they start to soften. Add the diced kielbasa and cook until it begins to brown, approximately 5 minutes.
  4. Add the cubed potatoes to the pot and stir everything together. Pour in your broth of choice and add the bay leaves, thyme, and black pepper.
  5. Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for about 20-25 minutes, or until the potatoes are tender.
  6. Once the potatoes are cooked, stir in the heavy cream (or your chosen alternative). Let the soup heat through for another 5 minutes, stirring occasionally.
  7. Taste your soup and adjust the seasoning if needed. You may want to add more black pepper or even a pinch of salt depending on your broth's saltiness.
  8. Remove the bay leaves before serving. Ladle the soup into bowls and garnish with fresh parsley or green onions if desired.
