Ingredients

Scale
  • 1 ½ cups crushed graham crackers
  • ½ cup melted butter
  • ¼ cup sugar
  • 1 cup coconut cream
  • 1 cup sweetened condensed milk
  • ½ cup freshly squeezed lime juice
  • Zest of 2 limes
  • 1 cup heavy cream
  • 1 tablespoon sugar
  • Splash of vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). In a mixing bowl, combine 1 ½ cups of crushed graham crackers with ½ cup of melted butter and ¼ cup of sugar. Mix until well combined. Press the mixture firmly into the bottom and up the sides of a 9-inch pie dish. Bake for about 10 minutes or until golden. Allow it to cool completely.
  2. In a large mixing bowl, whisk together 1 cup of coconut cream, 1 cup of sweetened condensed milk, and ½ cup of freshly squeezed lime juice. Mix until smooth and well combined. The mixture should become thick as the lime juice interacts with the cream.
  3. Don’t forget to add the zest of 2 limes for an extra burst of flavor! Gently fold it into the filling mixture.
  4. Pour the filling into your cooled graham cracker crust. Smooth the top with a spatula. Cover it with plastic wrap and refrigerate for at least 4 hours or overnight for the best results.
  5. When you’re ready to serve, whip 1 cup of heavy cream until soft peaks form. Add a tablespoon of sugar and a splash of vanilla extract, then whip until stiff peaks form.
  6. Top the pie with the whipped cream and garnish with toasted coconut flakes or lime slices if desired. Slice and enjoy your refreshing Coconut Lime Icebox Pie!

Keywords: For a better texture, chill your mixing bowl and beaters before whipping the cream. If you prefer a less sweet pie, reduce the amount of sweetened condensed milk or add more lime juice for a tangier flavor.
