- 1 cup creamy peanut butter
- ½ cup softened unsalted butter
- 2 cups powdered sugar
- 1 cup semi-sweet chocolate chips
- 1 tablespoon coconut oil
- In a large mixing bowl, combine 1 cup of creamy peanut butter, ½ cup of softened unsalted butter, and 2 cups of powdered sugar. Mix until everything is well blended and smooth.
- Cover the bowl with plastic wrap and chill in the refrigerator for about 30 minutes.
- After chilling, use a small cookie scoop or your hands to form 1-inch balls. Place them on a baking sheet lined with parchment paper.
- If you want to make dipping easier, insert a toothpick into the center of each ball.
- Return the baking sheet to the refrigerator for another 15-20 minutes to firm up the balls.
- While the balls are chilling, melt 1 cup of semi-sweet chocolate chips and 1 tablespoon of coconut oil in a microwave-safe bowl. Heat in 30-second intervals, stirring in between, until smooth.
- Once the chocolate is melted and the peanut butter balls are firm, remove them from the fridge. Dip each ball into the melted chocolate, covering about 2/3 of the ball, then place them back on the parchment paper.
- If you used toothpicks, carefully remove them now. You can smooth over the holes with a bit of melted chocolate.
- Place the dipped Buckeyes back in the refrigerator to set the chocolate, about 30 minutes.
