- Start by peeling and dicing about 2-3 medium-sized potatoes into small, even cubes. Rinse them under cold water to remove excess starch, then pat them dry with a kitchen towel.
- In a large skillet, heat a tablespoon of oil over medium heat. Add the diced beef bacon and cook until it's crispy and browned, about 5-7 minutes. Remove the bacon from the skillet and set it aside on a paper towel to drain excess grease.
- In the same skillet, add the diced onions and bell peppers to the rendered fat from the beef bacon. Sauté for about 3-4 minutes until they soften.
- Next, add the diced potatoes to the skillet and stir well. Season with salt, pepper, and any other seasonings you like. Cover the skillet and let the potatoes cook for about 10-15 minutes, stirring occasionally, until they are tender and golden brown.
- Once the potatoes are cooked, add the cooked beef bacon back into the skillet. Stir to combine all the ingredients and heat through for another 2-3 minutes.
- If you’d like, you can fry or scramble a couple of eggs in a separate pan while the hash finishes cooking. Serve the hash warm, topped with eggs for extra protein and richness.
