  • 1/4 cup Sugar (for streusel)
  • 1/4 cup Butter (cold, for streusel)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper or a silicone mat.
  2. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 2-3 minutes.
  3. Beat in the egg (or egg substitute) until well combined.
  4. In another bowl, whisk together the flour, baking powder, and salt. Gradually add this to the wet mixture, mixing until just combined.
  5. Gently fold in the blueberries, being careful not to crush them.
  6. In a separate bowl, combine 1/2 cup flour, 1/4 cup sugar, and 1/4 cup cold butter. Use your fingers or a pastry cutter to mix until crumbly. You can also add a pinch of cinnamon for extra flavor.
  7. Using a cookie scoop or spoon, drop dough onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Generously sprinkle the streusel topping over each cookie before baking.
  9. Place the cookies in the oven and bake for 12-15 minutes, or until the edges are golden and a toothpick inserted into the center comes out clean.
  10. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
