  • 1 cup Long-Grain White Rice (Basmati or Jasmine)
  • 2 cups Water or Vegetable Broth
  • 1/2 teaspoon Salt
  • 1/4 cup Fresh Cilantro, finely chopped
  • Juice of 1 Fresh Lime
  • 2 cans Canned Black Beans, drained and rinsed
  • 1 Yellow or White Onion, diced
  • 2 cloves Fresh Garlic, minced
  • 1 Bell Pepper, diced (optional)
  • 1 teaspoon Chili Powder
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Smoked Paprika
  • 1 teaspoon Dried Oregano
  • 1/2 cup Vegetable Broth
  • Juice of 1 Fresh Lime (for the bean mixture)
  • 1 pound Ground Beef (optional)
  • 1 Avocado, sliced or diced
  • 1 cup Corn (fresh, frozen, or canned)
  • 1 cup Diced Fresh Tomatoes or Pico de Gallo
  • 1/2 Red Onion, finely diced
  • 2 cups Shredded Lettuce
  • 1 cup Salsa
  • 1/2 cup Sour Cream or Greek Yogurt
  • Jalapeños, sliced or pickled (optional)

Instructions

  1. Rinse the rice under cold water until the water runs clear.
  2. In a medium saucepan, combine the rinsed rice with water (or vegetable broth) and a pinch of salt.
  3. Bring to a boil, then reduce the heat to low, cover tightly, and let simmer for about 15-18 minutes.
  4. Remove from heat and let sit, covered, for another 5-10 minutes.
  5. Fluff the rice with a fork and stir in the chopped cilantro and lime juice. Set aside.
  6. While the rice is cooking, drain and rinse the black beans thoroughly.
  7. In a large skillet, heat olive oil over medium heat.
  8. Add the diced onion (and bell pepper if using) and sauté for 5-7 minutes until softened.
  9. Add minced garlic and cook for another minute until fragrant.
  10. Stir in chili powder, ground cumin, smoked paprika, and dried oregano, toasting for about 30 seconds.
  11. Add the rinsed black beans and 1/2 cup vegetable broth to the skillet, stirring to combine.
  12. Let the mixture simmer for about 5-7 minutes until the liquid reduces slightly.
  13. Off the heat, stir in another squeeze of fresh lime juice and adjust seasoning.
  14. If using ground beef, brown it in a separate skillet, drain excess fat, and season with taco spices.
  15. Assemble the bowls starting with cilantro lime rice, followed by the black bean mixture and ground beef (if using).
  16. Top with fresh toppings: corn, avocado, tomatoes, lettuce, red onion, jalapeños, sour cream or Greek yogurt, and salsa.
