Ingredients

Scale
  • 4 fish fillets (such as cod, tilapia, or haddock)
  • 1 cup grated Parmesan cheese
  • 1 cup breadcrumbs (preferably panko for extra crunch)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 large eggs
  • 2 tablespoons Dijon mustard
  • 2 tablespoons olive oil
  • 1 lemon, cut into wedges (for serving)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Choose Your Fish: Select firm white fish fillets like cod or tilapia for best results.
  2. Pat Dry: Use paper towels to pat the fish fillets dry, ensuring better coating adherence.
  3. Season the Fish: Lightly season both sides of the fish fillets with salt and pepper.
  4. Mix the Dry Ingredients: In a large bowl, combine Parmesan cheese, breadcrumbs, garlic powder, onion powder, oregano, paprika, and a pinch of salt and pepper. Mix well.
  5. Prepare the Egg Mixture: In another bowl, whisk together eggs and Dijon mustard until smooth.
  6. Dredge the Fish: Dip each fish fillet into the egg mixture, allowing excess to drip off.
  7. Coat with Parmesan Mixture: Place the egg-coated fillet into the Parmesan mixture, pressing gently to adhere. Flip and coat the other side.
  8. Repeat for All Fillets: Continue the process for all fillets, placing them on a plate or parchment-lined baking sheet.
  9. Preheat the Oven: Preheat your oven to 400°F (200°C).
  10. Prepare the Baking Sheet: Line a baking sheet with parchment paper or grease it lightly with olive oil.
  11. Arrange the Fish: Place the coated fillets on the baking sheet, spaced evenly.
  12. Drizzle with Olive Oil: Optionally drizzle olive oil over the fillets for added crispiness.
  13. Bake the Fish: Bake for 15-20 minutes, or until the fish is cooked through and the crust is golden brown.
  14. Prepare the Plate: While the fish bakes, prepare serving plates with sides like salad or rice.
  15. Garnish: Let the fish rest for a couple of minutes after baking, then transfer to serving plates.
  16. Add Fresh Parsley: Sprinkle chopped parsley over the fish for garnish.
  17. Serve with Lemon Wedges: Serve with lemon wedges for a fresh squeeze of juice.

Notes

  • For extra flavor, consider adding herbs like thyme or basil to the breadcrumb mixture.
  • Ensure the fish is cooked through by checking that it flakes easily with a fork.
  • This dish pairs well with a variety of sides, including vegetables, rice, or a fresh salad.
