  • 8 slices of bacon
  • 1 cup shredded cheddar cheese
  • 1/2 cup cream cheese, softened
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Slice each chicken breast horizontally to create a pocket, being careful not to cut all the way through.
  3. In a small bowl, mix garlic powder, onion powder, smoked paprika, salt, and pepper. Rub this mixture all over the chicken breasts, including inside the pockets.
  4. In another bowl, combine softened cream cheese and shredded cheddar cheese until well blended.
  5. Generously fill each chicken pocket with the cheese mixture and press the edges together to seal.
  6. Lay two slices of bacon side by side, place the stuffed chicken at one end, and roll it up tightly. Secure with toothpicks if necessary.
  7. In a large oven-safe skillet, heat olive oil over medium-high heat.
  8. Sear the bacon-wrapped chicken for 3-4 minutes on each side until the bacon is golden brown and crispy.
  9. Move the skillet to the preheated oven and bake for 20-25 minutes, or until the internal temperature reaches 165°F (75°C).
  10. Use a meat thermometer to ensure the chicken is fully cooked.
  11. Let the chicken rest for about 5 minutes after removing it from the oven.
  12. Slice the chicken, garnish with chopped parsley, and serve with your favorite sides.
