Crispy Balsamic Thyme Potatoes are a delicious side dish featuring tender baby potatoes roasted with a tangy balsamic marinade and fragrant thyme. With a crispy exterior and soft interior, they make a perfect accompaniment to any meal.

  • 3 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)
  • 4 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • Fresh thyme sprigs for garnish (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Rinse the baby potatoes under cold water and pat them dry. Cut larger potatoes in half or quarters, keeping smaller ones whole.
  3. In a large pot, cover the potatoes with cold water and add a pinch of salt. Bring to a boil, then reduce to a simmer. Cook for 10-15 minutes until fork-tender but firm.
  4. Drain the potatoes in a colander and let them cool for a few minutes.
  5. In a large mixing bowl, combine olive oil, balsamic vinegar, minced garlic, thyme, salt, black pepper, and red pepper flakes. Whisk until well combined.
  6. Add the cooled potatoes to the marinade and gently toss until evenly coated.
  7. Line a large baking sheet with parchment paper or grease it lightly.
  8. Spread the marinated potatoes in a single layer on the baking sheet, ensuring they are not overcrowded.
  9. Roast in the preheated oven for 25-30 minutes, tossing halfway through for even browning.
  10. After 30 minutes, check for golden brown and crispy texture. If needed, roast for an additional 5-10 minutes.
  11. Remove from the oven and let cool slightly. Optionally, sprinkle fresh thyme leaves on top.
  12. Transfer to a serving dish and enjoy as a side for grilled meats, roasted chicken, or salads.
