Ingredients

Scale
  • 2 cups plain Greek yogurt
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries, hulled and sliced
  • 1/2 cup dark chocolate chips
  • 1 tablespoon coconut oil (optional)
  • Pinch of salt

Instructions

  1. In a medium-sized mixing bowl, combine the Greek yogurt, honey (or maple syrup), vanilla extract, and a pinch of salt. Whisk until well incorporated.
  2. Taste the mixture and adjust sweetness if necessary by adding more honey or maple syrup.
  3. Rinse the fresh strawberries under cold water and pat them dry with a paper towel.
  4. Remove the green tops and slice the strawberries into thin rounds, about 1/4 inch thick.
  5. Set the sliced strawberries aside.
  6. Grab a silicone mold or an ice cube tray.
  7. Fill each cavity of the mold halfway with the yogurt mixture using a spoon or piping bag.
  8. Gently press one or two slices of strawberries into the yogurt mixture in each cavity.
  9. Top off with more yogurt mixture, leaving a tiny bit of space at the top.
  10. Tap the mold on the counter to remove air bubbles.
  11. In a microwave-safe bowl, combine the dark chocolate chips and coconut oil (if using).
  12. Microwave in 30-second intervals, stirring in between, until melted and smooth. Let cool for a minute.
  13. Remove the yogurt bites from the freezer after 2-3 hours, or until completely frozen.
  14. Pop each yogurt bite out of the mold.
  15. Dip each frozen yogurt bite into the melted chocolate, ensuring even coating.
  16. Place the chocolate-coated bites on a parchment-lined baking sheet.
  17. Return to the freezer for about 30 minutes to set the chocolate.
  18. Once the chocolate has set, transfer the yogurt bites to an airtight container, layering with parchment paper to prevent sticking.
  19. Store in the freezer for up to 2 months.
  20. Enjoy as a refreshing snack or dessert!

Notes

  • Feel free to substitute strawberries with other fruits like blueberries or raspberries.
  • Adjust the sweetness of the yogurt mixture according to your preference.
  • For a fun twist, try adding nuts or granola on top of the yogurt before freezing.
