Chili Lime Cod: A Flavorful Recipe for a Healthy Dinner

This Chili Lime Cod features tender fillets marinated in a zesty blend of lime juice, spices, and garlic, then baked to perfection. It’s a quick, healthy meal that pairs well with rice, grilled vegetables, or fresh salads.

  • 4 cod fillets (about 6 ounces each)
  • 2 tablespoons olive oil
  • 2 tablespoons fresh lime juice
  • 1 tablespoon lime zest
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (adjust to taste)
  • Salt and pepper to taste
  • Fresh cilantro, chopped (for garnish)
  • Lime wedges (for serving)

Instructions

  1. In a medium-sized bowl, combine the olive oil, fresh lime juice, and lime zest.
  2. Add the minced garlic to the bowl.
  3. Sprinkle in the chili powder, cumin, smoked paprika, and cayenne pepper.
  4. Season with salt and pepper to taste.
  5. Whisk all the ingredients together until well combined.
  6. Place the cod fillets in a shallow dish or a resealable plastic bag.
  7. Pour the marinade over the cod, ensuring each fillet is well coated.
  8. Seal the bag or cover the dish with plastic wrap. Let the cod marinate in the refrigerator for at least 30 minutes (up to 2 hours for more flavor).
  9. Preheat your oven to 400°F (200°C).
  10. Line a baking sheet with parchment paper or lightly grease it.
  11. Once marinated, remove the cod from the refrigerator and let it sit at room temperature for about 10 minutes.
  12. Place the marinated cod fillets on the prepared baking sheet, spacing them out evenly. Pour any remaining marinade over the fillets.
  13. Bake for 12-15 minutes, or until the fish flakes easily with a fork and reaches an internal temperature of 145°F (63°C).
  14. Once cooked, let the cod rest for a couple of minutes.
  15. Chop fresh cilantro for garnish.
  16. Serve the cod fillets on a platter or individual plates, squeezing extra lime juice over the top.
  17. Garnish with chopped cilantro and serve with lime wedges on the side.
