  • 23 tablespoons Caesar dressing
  • Crusty bread (e.g., ciabatta roll, sourdough loaf, or baguette)
  • ½ cup good quality mayonnaise
  • 2 cloves fresh garlic, minced
  • 1 teaspoon fresh lemon juice
  • Pinch of salt and black pepper

Instructions

  1. Prepare the Garlic Aioli: In a small bowl, combine ½ cup good quality mayonnaise with 2 cloves of fresh garlic, minced very finely. Add 1 teaspoon of fresh lemon juice and a pinch of salt and black pepper. Whisk everything together until well combined and creamy. Taste and adjust seasoning if needed. Let it sit in the fridge for at least 15-20 minutes to allow the garlic flavor to mellow and infuse.
  2. Cook the Chicken: Pat 2 boneless, skinless chicken breasts dry with paper towels. Season generously on both sides with salt, black pepper, garlic powder, and dried oregano. Heat 1 tablespoon of olive oil in a large skillet or grill pan over medium-high heat. Once hot, add the chicken breasts and cook for 5-7 minutes per side, or until golden brown and cooked through (internal temperature reaches 165°F / 74°C). Remove the chicken from the pan, tent it loosely with foil, and let it rest for 5 minutes. Slice the chicken into thin strips or dice it into bite-sized pieces.
  3. Prepare Caesar Components: Wash and thoroughly dry 4-5 large leaves of romaine lettuce. Chop them into smaller pieces for the sandwich. Grate about ¼ cup of fresh Parmesan cheese. In a medium bowl, combine the sliced chicken with 2-3 tablespoons of Caesar dressing, tossing gently to coat. Optionally, add the chopped romaine and Parmesan to this bowl and lightly toss with more dressing.
  4. Toast the Bread: Slice your chosen bread in half lengthwise. Toast it lightly in a toaster, under the broiler, or in the same pan you cooked the chicken in. A lightly toasted bread adds crucial texture and prevents it from getting soggy.
  5. Assemble the Sandwich: Generously spread the prepared garlic aioli on both inner sides of the toasted bread. On the bottom half of the bread, layer the Caesar-dressed chicken. Top the chicken with the chopped romaine lettuce and sprinkle with extra fresh Parmesan cheese. Place the top half of the bread over the filling and press down gently. Serve immediately.
