Experience a delightful twist on the classic Italian dessert with this Cherry Amaretto Tiramisu. Layers of coffee-soaked ladyfingers, creamy mascarpone, and fresh cherries create a rich and flavorful treat, perfect for any occasion.

Ingredients

Scale
  • 1 cup fresh cherries, pitted and halved
  • 1/2 cup Amaretto liqueur
  • 1 cup heavy cream
  • 1 cup mascarpone cheese
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup strong brewed coffee, cooled
  • 24 ladyfinger cookies
  • Cocoa powder, for dusting
  • Chocolate shavings, for garnish (optional)

Instructions

  1. Wash the fresh cherries thoroughly. Pit and halve them to release their juices.
  2. In a medium bowl, combine the halved cherries with 1/4 cup of Amaretto liqueur. Stir gently and let sit for 15-20 minutes.
  3. In a large mixing bowl, whip 1 cup of heavy cream on medium speed until soft peaks form (about 3-5 minutes).
  4. Add 1 cup of mascarpone cheese, 1/2 cup of powdered sugar, and 1 teaspoon of vanilla extract. Whip on low speed until smooth, being careful not to overmix.
  5. Brew a strong cup of coffee and let it cool to room temperature.
  6. Stir in the remaining 1/4 cup of Amaretto liqueur into the cooled coffee.
  7. Dip a ladyfinger cookie quickly into the coffee mixture, ensuring it’s coated but not soaked.
  8. Place the dipped ladyfinger in a rectangular or square dish to form a single layer.
  9. Spread half of the mascarpone cream mixture over the ladyfingers.
  10. Distribute half of the cherry mixture over the mascarpone layer, including some juices.
  11. Repeat the process with more dipped ladyfingers, the remaining mascarpone cream, and the rest of the cherries.
  12. Cover the dish with plastic wrap or aluminum foil and refrigerate for at least 4 hours, preferably overnight.
  13. Before serving, dust the top with cocoa powder and optionally sprinkle with chocolate shavings.
  14. Cut into squares or rectangles and carefully lift pieces out with a spatula.
  15. Serve on dessert plates and enjoy!

Notes

  • For best results, allow the tiramisu to chill overnight to enhance the flavors.
