- 2 cups brewed coffee (espresso strength)
- 2–3 teaspoons cherry amaretto extract
- 6 large egg yolks
- ½ cup granulated sugar
- 16 ounces (about 2 cups) mascarpone cheese, softened
- 1 ½ cups heavy cream (or whipping cream), very cold
- ¼ cup granulated sugar (for whipped cream)
- Ladyfingers (Savoiardi), enough to create layers
- Unsweetened cocoa powder, for dusting
- Brew about 2 cups of very strong coffee or espresso and let it cool completely. Pour it into a shallow dish or bowl and stir in 2-3 teaspoons of cherry amaretto extract. Set aside.
- In a heatproof bowl set over a saucepan of simmering water, combine 6 large egg yolks and ½ cup of granulated sugar. Whisk continuously for about 8-10 minutes until the mixture becomes pale yellow, thick, and almost doubled in volume. Remove from heat and whisk for another 5 minutes until cooled and thick.
- In a separate large bowl, combine 16 ounces of softened mascarpone cheese with the cooled egg yolk mixture and gently fold until just combined. In another chilled bowl, whip 1 ½ cups of very cold heavy cream with ¼ cup of granulated sugar until soft peaks form. Gently fold the whipped cream into the mascarpone mixture and add 1-2 teaspoons of cherry amaretto extract.
- Dip each ladyfinger into the coffee and extract mixture for 1-2 seconds per side, then arrange a single layer in the bottom of your serving dish. Spread half of the mascarpone cream over the ladyfingers, then repeat with another layer of dipped ladyfingers and the remaining mascarpone cream.
- Cover the tiramisu tightly with plastic wrap and refrigerate for at least 6-8 hours, preferably overnight. Before serving, dust the top with unsweetened cocoa powder and slice to serve.
