  • 2 boneless, skinless chicken breasts
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup cream cheese, softened
  • 1/4 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 4 slices of your favorite bread (sourdough, whole grain, or white)
  • 2 tablespoons butter, softened
  • 1 cup fresh spinach or lettuce (optional)
  • Tomato slices (optional)
  • Pickles (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Pound the chicken breasts to an even thickness of about 1 inch. Season both sides with salt, pepper, garlic powder, and onion powder.
  3. Heat a tablespoon of olive oil in a large oven-safe skillet over medium-high heat. Sear the chicken for 4-5 minutes on each side until golden brown.
  4. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the internal temperature reaches 165°F (75°C).
  5. In a medium mixing bowl, combine softened cream cheese, mayonnaise, Dijon mustard, and a pinch of salt and pepper. Mix until smooth.
  6. Fold in the shredded cheddar and mozzarella cheeses until well combined.
  7. Once the chicken is cooked, let it rest for 5 minutes, then slice it into thin strips.
  8. Assemble the sandwich by spreading a generous amount of the cheese mixture on one slice of bread, layering with sliced chicken, and adding spinach or lettuce, tomato, and pickles if desired. Top with another slice of bread spread with more cheese mixture.
  9. In a clean skillet, melt the remaining butter over medium heat. Cook the assembled sandwich for 3-4 minutes on one side until golden brown, pressing down gently with a spatula.
  10. Flip the sandwich and cook for another 3-4 minutes, covering with a lid for the last minute to melt the cheese.
  11. Remove from the skillet, let cool for a minute, then slice in half and serve warm.
