  • 2 cups small pasta (elbow macaroni or shells)

  • 2 cups tater tots

Instructions

  1. In a large pot, brown 1 pound of ground beef over medium heat. Break it up with a spoon and cook until no longer pink, about 5-7 minutes. Drain any excess grease.
  2. Add 1 diced onion and 1 diced bell pepper to the pot. Sauté for about 3-4 minutes until they soften.
  3. Stir in 2 minced garlic cloves, 1 teaspoon of salt, 1 teaspoon of black pepper, and 1 tablespoon of Worcestershire sauce. Cook for another minute until fragrant.
  4. Pour in 4 cups of beef broth and bring to a boil. Add 2 cups of pasta and cook according to package directions until al dente, usually around 8-10 minutes.
  5. Once the pasta is cooked, lower the heat and stir in 1 cup of shredded cheddar cheese until melted and creamy.
  6. While the soup is simmering, bake 2 cups of tater tots according to package instructions until crispy.
  7. Ladle the soup into bowls and top each serving with crispy tater tots. You can sprinkle extra cheese or fresh herbs like parsley for garnish, if desired.
