Instructions

  1. Start by bringing a large pot of salted water to a boil. Add 8 ounces of elbow macaroni and cook according to package instructions until al dente, usually around 7-8 minutes. Drain the pasta and rinse under cold water to stop the cooking process.
  2. While the pasta is cooking, chop your veggies. Dice 1 cup of bell peppers (any color), 1/2 cup of red onion, and 1 cup of celery. You want them to be bite-sized to mix well with the pasta.
  3. In a large mixing bowl, combine 1 cup of sour cream, 1/2 cup of mayonnaise, 1 teaspoon of paprika, and salt and pepper to taste. Mix until smooth and well blended.
  4. Shred 1 cup of sharp cheddar cheese and fold it into the dressing.
