Caprese Roasted Asparagus Dish: A Delicious Twist on a Classic Recipe

This Caprese Roasted Asparagus features tender asparagus roasted to perfection and topped with fresh cherry tomatoes, mozzarella, and basil, all drizzled with a sweet balsamic glaze. It’s a colorful and delicious side dish or light appetizer that’s sure to impress!

  • 1 pound fresh asparagus, trimmed
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper, to taste
  • 1 cup cherry tomatoes, halved
  • 8 ounces fresh mozzarella balls, halved (bocconcini or ciliegine)
  • 1/4 cup fresh basil leaves, chopped
  • 2 tablespoons balsamic glaze

Instructions

  1. Rinse the asparagus under cold water to remove any dirt or grit. Pat them dry with a clean kitchen towel.
  2. Trim the woody ends of the asparagus by gently bending until it snaps or cutting about 1-2 inches off the bottom with a knife.
  3. Place the trimmed asparagus in a large mixing bowl.
  4. Drizzle the olive oil over the asparagus.
  5. Sprinkle the garlic powder, salt, and pepper over the asparagus.
  6. Toss the asparagus in the bowl until evenly coated with the olive oil and seasonings.
  7. Preheat your oven to 425°F (220°C).
  8. Line a baking sheet with parchment paper or aluminum foil. Spread the seasoned asparagus in a single layer on the baking sheet.
  9. Roast the asparagus for about 12-15 minutes, or until tender and slightly crispy, checking around the 10-minute mark.
  10. In a medium bowl, combine the halved cherry tomatoes and mozzarella balls.
  11. Add the chopped fresh basil leaves to the bowl.
  12. Drizzle a little olive oil over the mixture, and season with a pinch of salt and pepper. Toss gently to combine.
  13. Once the asparagus is done roasting, remove it from the oven and let it cool for a minute.
  14. Transfer the roasted asparagus to a serving platter.
  15. Spoon the tomato and mozzarella mixture over the roasted asparagus.
  16. Drizzle the balsamic glaze over the top.

  • For a homemade balsamic glaze, reduce balsamic vinegar on the stove until it thickens.
  • This dish can be served warm or at room temperature.
