Brownie Protein Bites (Gluten Free, Paleo)

These Brownie Protein Bites are everything you crave in a fudgy, rich brownie—but made with nourishing, gluten-free, and paleo-friendly ingredients! Quick, no-bake, and naturally sweetened with dates, they’re perfect for a wholesome snack, quick breakfast, or post-workout treat. Anything but boring!!

Ingredients

  • 1 cup Medjool dates, pitted

  • 1/2 cup raw almonds

  • 1/2 cup raw walnuts

  • 1/4 cup cacao powder (unsweetened)

  • 1/4 cup collagen peptides or your favorite paleo protein powder

  • 2 tablespoons almond butter

  • 1 tablespoon coconut oil

  • 1 teaspoon vanilla extract

  • Pinch of sea salt

  • Optional: cacao nibs or chopped nuts for topping

Instructions

  • Add almonds and walnuts to a food processor and pulse until finely ground.

  • Add pitted dates and process until the mixture starts to come together.

  • Add cacao powder, collagen or protein powder, almond butter, coconut oil, vanilla, and sea salt. Blend until fully combined and sticky.

  • Press the dough into a lined baking dish or roll into balls for bites.

  • Sprinkle with optional cacao nibs or nuts.

 

  • Chill for at least 30 minutes, then slice or enjoy!

Notes

  • If your dates are dry, soak them in warm water for 5–10 minutes before using.

  • You can swap nuts or protein powder based on what you have!

 

  • For a little extra flair, roll the bites in shredded coconut or dust with extra cacao powder before chilling.
