Instructions

  1. Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners.
  2. In a medium bowl, whisk together the all-purpose flour, granulated sugar, baking powder, baking soda, and salt until well combined.
  3. In a large bowl, cream together the softened unsalted butter and granulated sugar using an electric mixer until light and fluffy, about 2-3 minutes. Beat in the large eggs one at a time, mixing well after each addition. Stir in the tequila extract, fresh lime zest, and fresh lime juice until just combined.
  4. With the mixer on low speed, gradually add about one-third of the dry ingredient mixture to the wet ingredients, mixing until just combined. Pour in half of the buttermilk and mix until just incorporated. Repeat this process, alternating with the remaining dry ingredients and buttermilk, ending with the dry ingredients.
  5. Divide the batter evenly among the 12 prepared muffin cups, filling each about two-thirds full. Bake for 18-22 minutes, or until a wooden skewer or toothpick inserted into the center of a cupcake comes out clean. Let the cupcakes cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
  6. While the cupcakes are cooling, whisk together the powdered sugar and fresh lime juice in a small bowl until smooth. Adjust the consistency as needed.
  7. Once the cupcakes are completely cool, drizzle or spoon the citrus glaze over the tops of each cupcake. Allow the glaze to set for about 10-15 minutes before serving.
