Breakfast Club Sandwich: The Ultimate Recipe for a Delicious Morning Meal

Enjoy a hearty breakfast club sandwich packed with crispy bacon, creamy avocado, fluffy scrambled eggs, and fresh veggies, all nestled between toasted whole grain bread. It’s a satisfying and delicious way to start your day!

  • 4 slices of whole grain bread
  • 4 large eggs
  • 4 slices of cooked bacon
  • 1 ripe avocado
  • 1 cup of fresh spinach leaves
  • 1 medium tomato, sliced
  • 1/2 cup of shredded cheddar cheese
  • 2 tablespoons of mayonnaise
  • 1 tablespoon of Dijon mustard
  • Salt and pepper to taste
  • Butter for toasting

Instructions

  1. In a skillet over medium heat, cook the bacon until crispy, about 5-7 minutes. Drain on paper towels.
  2. Cut the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash with a fork until creamy, seasoning with salt and pepper.
  3. Slice the medium tomato into even rounds.
  4. Rinse the spinach leaves under cold water and pat dry.
  5. Crack the eggs into a bowl, whisk with a pinch of salt and pepper.
  6. In the same skillet used for bacon, reduce heat to low, add butter, and let it melt.
  7. Pour the whisked eggs into the skillet. Cook undisturbed for 1-2 minutes until edges set. Gently stir with a spatula, cooking until fully set but still creamy, about 3-4 minutes. Remove from heat.
  8. Lightly butter each slice of bread and toast until golden brown.
  9. On one slice of toasted bread, spread 1 tablespoon of mayonnaise. On another slice, spread 1 teaspoon of Dijon mustard.
  10. On the mayonnaise slice, layer half of the mashed avocado, followed by spinach, 2 slices of bacon, tomato slices, cheddar cheese, and half of the scrambled eggs.
  11. Place the slice with Dijon mustard on top, mustard side down, and press gently.
  12. Use remaining ingredients to create a second sandwich.
  13. Cut each sandwich diagonally in half.
  14. Arrange on a plate and serve immediately, optionally with fresh fruit or a small salad.
