Instructions

  2. Bring the mixture to a gentle simmer over medium heat. Stir occasionally to help the blueberries break down and release their juices.
  3. Once the blueberries have softened (about 5-7 minutes), add 1 cup of granulated sugar to the saucepan. Stir until the sugar has completely dissolved.
  4. Remove the saucepan from heat and let the mixture cool for a few minutes. Then, strain the syrup through a fine-mesh sieve into a clean jar or container, pressing down on the solids to extract as much liquid as possible. Discard the solids.
  5. Allow the syrup to cool completely before sealing the jar. You can store this blueberry thyme syrup in the refrigerator for up to two weeks.
  6. Once your syrup is ready, gather the remaining ingredients: gin, fresh lemon juice, club soda, and ice cubes.
  7. In a cocktail shaker, combine 2 ounces of gin, 1 ounce of fresh lemon juice, and 1 ounce of the blueberry thyme syrup you just made.
  8. Fill the shaker with ice cubes, covering the liquid completely.
