  • 2 1/4 teaspoons active dry yeast
  • 1 1/2 cups warm water or milk (105-115°F)
  • 1 tablespoon granulated sugar
  • 1 teaspoon fine sea salt
  • 1/4 cup unsalted butter or olive oil, melted
  • 1 cup freshly grated Parmesan cheese
  • 2 tablespoons Italian seasoning
  • 1 tablespoon dried oregano
  • 1 teaspoon garlic powder
  • Extra virgin olive oil for swirl filling

Instructions

  1. In a large bowl, or the bowl of your stand mixer, combine the warm water (or milk) and granulated sugar. Sprinkle the active dry yeast over the top and let it sit for 5-10 minutes until foamy.
  2. To the yeast mixture, add the salt and melted unsalted butter (or olive oil). Gradually add the flour, about a cup at a time, mixing with a spoon or the dough hook of your stand mixer on low speed. Once the dough starts to come together, increase the speed to medium-low.
  3. Continue to knead the dough for 7-10 minutes until smooth and elastic. If kneading by hand, turn the dough out onto a lightly floured surface and knead until it's no longer sticky.
  4. Lightly grease a clean bowl with a little olive oil. Place the dough in the bowl, turning it once to coat the top. Cover the bowl tightly and let the dough rise in a warm place for 1 to 1.5 hours, or until it has doubled in size.
  5. While the dough is rising, prepare the swirl filling by combining the freshly grated Parmesan cheese, Italian seasoning, dried oregano, garlic powder, and a drizzle of olive oil in a small bowl. Mix until you have a coarse paste.
  6. Once the dough has doubled, gently punch it down and turn it out onto a lightly floured surface. Roll the dough into a large rectangle, roughly 16×12 inches.
  7. Spread the Italian herb Parmesan filling evenly over the rolled-out dough, leaving a small border on one of the longer edges.
  8. Starting from the opposite long edge, roll the dough up tightly into a log and pinch the seam closed. Slice the log into 12-15 equal pieces, each about 1 to 1.5 inches thick.
  9. Lightly grease a 9×13 inch baking dish or a 9-inch round cake pan. Arrange the sliced swirls cut-side up in the prepared pan.
  10. Cover the pan loosely and let the swirl bread rise again in a warm place for another 30-45 minutes, or until puffy.
  11. Preheat your oven to 375°F (190°C) during the last 15 minutes of the second rise. Bake for 25-35 minutes, or until golden brown and the internal temperature reaches 200-210°F.
  12. Remove the bread from the oven and let it cool for at least 15-20 minutes before serving.
