  • 2 large egg yolks
  • 1/2 cup brown sugar (optional)
  • 2 cups whole milk
  • 1 cup heavy cream

  • 1/2 cup chocolate chips or chopped chocolate chunks (optional)

Instructions

  1. Cube the stale bread into roughly 1-inch pieces and place them in a very large bowl.
  2. In a medium bowl, beat the softened cream cheese with granulated sugar and vanilla extract until smooth. If using an egg yolk, whisk it in and set aside.
  3. Melt the semi-sweet chocolate over a double boiler or in the microwave until smooth and glossy. Let it cool slightly.
  4. In another large bowl, whisk together the eggs and egg yolks until well combined. Gradually whisk in the granulated sugar and brown sugar until dissolved. Then pour in the whole milk, heavy cream, and vanilla extract. Slowly whisk in the melted chocolate until uniform.
  5. Pour the chocolate custard mixture over the bread cubes and gently toss until all cubes are coated. Let it sit for 15-20 minutes to absorb the custard.
  6. Lightly grease a 9×13-inch baking dish. Spoon half of the chocolate-soaked bread mixture into the dish, spreading it evenly.
  7. Dollop spoonfuls of the cream cheese mixture over the first layer of bread, creating distinct pockets. If desired, scatter some chocolate chips over the cream cheese.
