Instructions

  1. Start by peeling and chopping about 2 pounds of potatoes. Boil them in salted water until tender, around 15-20 minutes. Drain and return to the pot.
  2. Mash the drained potatoes until smooth. Add in 1 cup of shredded sharp cheddar cheese, 1/2 cup of sour cream, and season with salt and pepper to taste. Mix until well combined and creamy.
  3. In a skillet, cook 8 ounces of beef bacon over medium heat until crispy. Remove from the skillet and let it drain on paper towels, then chop it into small pieces.
  4. Stir the chopped beef bacon and 1/4 cup of chopped green onions into the mashed potato mixture. Make sure everything is evenly distributed.
  5. Beat 1 large egg and mix it into the potato mixture to help bind everything together.
