Bang Bang Chicken Bowl: A Delicious Recipe for a Flavorful Meal

  • 1 pound boneless, skinless chicken breasts
  • 1 cup cooked jasmine rice
  • 1 cup broccoli florets
  • 1 cup shredded carrots
  • 1 red bell pepper, sliced
  • 1/4 cup green onions, chopped
  • 1/4 cup cilantro, chopped
  • 1/2 cup mayonnaise
  • 1/4 cup sweet chili sauce
  • 1 tablespoon sriracha (adjust to taste)
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar
  • Salt and pepper to taste
  • 1 tablespoon vegetable oil (for cooking)

Instructions

  1. Trim any excess fat from the chicken breasts and season both sides with salt and pepper.
  2. Heat a large skillet over medium-high heat and add vegetable oil. Once hot, add the chicken breasts and cook for 6-7 minutes without moving them.
  3. Flip the chicken, reduce heat to medium, and cook for another 6-7 minutes until the internal temperature reaches 165°F (75°C).
  4. Remove the chicken from the skillet and let it rest for 5 minutes before slicing into bite-sized pieces.
  5. In a medium bowl, combine mayonnaise, sweet chili sauce, sriracha, soy sauce, sesame oil, and rice vinegar.
  6. Whisk until smooth and well combined. Adjust sriracha for desired heat level.
  7. Wash the broccoli florets and cut them into smaller pieces if necessary.
  8. In the same skillet, add a splash of water and the broccoli. Cover and steam for 3-4 minutes until bright green and tender-crisp.
  9. Remove the lid, add shredded carrots and sliced red bell pepper, and stir-fry for 2-3 minutes. Season with salt and pepper.
  10. Remove from heat and set aside.
  11. Start with a base of cooked jasmine rice (about 1/2 cup per bowl).
  12. Add sautéed vegetables on top of the rice.
  13. Place sliced chicken over the vegetables.
  14. Drizzle with Bang Bang sauce.
  15. Garnish with chopped green onions and cilantro.

  • Serve immediately while warm, with extra Bang Bang sauce on the side if desired.
  • For added crunch, consider topping with crushed peanuts or sesame seeds.
