Ingredients

Scale
  • 4 Overripe Bananas
  • 2 cups All-Purpose Flour
  • 1/2 cup Granulated Sugar
  • 1/2 cup Brown Sugar
  • 1/2 cup Melted Unsalted Butter
  • 1/4 cup Neutral Oil (vegetable, canola, or grapeseed)
  • 2 Large Eggs
  • 1/2 cup Buttermilk
  • 1 teaspoon Baking Soda
  • 1 teaspoon Baking Powder
  • 1 teaspoon Vanilla Extract
  • 1/2 teaspoon Salt
  • Optional Add-ins: 1 cup Chocolate Chips (dark, milk, or semi-sweet), 1 cup chopped walnuts or pecans

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9×5 inch loaf pan by greasing it with butter or cooking spray and dusting it lightly with flour.
  2. In a large mixing bowl, mash the overripe bananas with a fork until mostly smooth, leaving a few small lumps.
  3. Add the melted unsalted butter and neutral oil to the mashed bananas and stir until well combined. Then, add the eggs, buttermilk, granulated sugar, brown sugar, and vanilla extract, stirring until the mixture is uniform and smooth.
  4. Add the all-purpose flour, baking soda, baking powder, and salt directly into the wet mixture.
  5. Gently fold the dry ingredients into the wet until just combined, ensuring no streaks of dry flour remain but avoiding overmixing.
  6. If using, fold in the chocolate chips, nuts, or any other add-ins evenly throughout the batter.
  7. Pour the batter into the prepared loaf pan and smooth the top with a spatula. Bake for 55-70 minutes, or until a wooden skewer or toothpick inserted into the center comes out clean or with a few moist crumbs.
  8. Once baked, remove the loaf from the oven and let it cool in the pan for about 10-15 minutes before inverting it onto a wire rack to cool completely.

Keywords: Use heavily spotted or fully brown bananas for the best flavor and moisture. Avoid overmixing the batter to ensure a tender crumb, and consider adding a sprinkle of granulated sugar on top before baking for a crispy crust.
