Baked Salmon with Asparagus: A Healthy and Delicious Recipe for Dinner

This baked salmon with asparagus is a nutritious and delicious dish featuring tender salmon fillets paired with vibrant asparagus, all marinated in a zesty lemon and herb mixture. Ideal for a quick weeknight meal or a special occasion, it’s easy to prepare and packed with flavor.

  • 4 salmon fillets (about 6 ounces each)
  • 1 pound fresh asparagus, trimmed
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 lemon, zested and juiced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a small bowl, combine the olive oil, minced garlic, lemon zest, lemon juice, dried thyme, and dried rosemary. Whisk until well combined.
  2. Place the salmon fillets in a shallow dish or resealable plastic bag. Pour half of the marinade over the salmon, ensuring each fillet is well coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for enhanced flavor.
  3. Rinse the asparagus under cold water and trim the tough ends. Toss the trimmed asparagus with the remaining marinade and set aside.
  4. Preheat your oven to 400°F (200°C).
  5. Line a large baking sheet with parchment paper or aluminum foil. Arrange the marinated salmon fillets on one side of the baking sheet.
  6. Place the marinated asparagus on the other side of the baking sheet in a single layer. Season both with salt and pepper. Bake for 12-15 minutes, or until the salmon flakes easily and the asparagus is tender yet crisp.
  7. Ensure the salmon is opaque and flakes easily. The asparagus should be bright green and tender.
  8. Remove from the oven and let rest for a couple of minutes. Transfer to a serving platter, drizzle with any remaining juices, and garnish with chopped parsley.

  • For added flavor, consider adding crushed red pepper flakes to the marinade for a bit of heat.
  • You can substitute asparagus with other vegetables like broccoli or green beans if desired.
