  • Fresh basil or parsley, for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Use a medium-sized baking dish or an oven-safe skillet, preferably cast-iron.
  3. Place the halved cherry tomatoes in the baking dish.
  4. Sprinkle the crumbled feta cheese evenly over the tomatoes.
  5. Drizzle olive oil over the mixture, then sprinkle with dried oregano, red pepper flakes (if using), and a pinch of salt and pepper. Toss gently to coat.
  6. Bake in the preheated oven for about 20 minutes until the tomatoes soften and the feta begins to melt and brown.
  7. Remove the dish from the oven and make four small wells in the mixture. Crack an egg into each well.
  8. Bake for an additional 10-15 minutes, depending on your desired egg doneness.
