  • Salt and pepper to taste
  • 1/4 cup red onion, finely chopped
  • 1/4 cup celery, finely chopped
  • 1/4 cup fresh cilantro, chopped (optional)
  • 4 large lettuce leaves
  • Whole grain or spinach wraps (4 large)
  • Cherry tomatoes, halved (for garnish, optional)

Instructions

  1. Gather all ingredients on the counter for easy access.
  2. Cut the ripe avocados in half, remove the pit, and scoop the flesh into a mixing bowl.
  3. Mash the avocados with a fork until smooth but still slightly chunky (about 1-2 minutes).
  4. Add the shredded chicken to the bowl, ensuring to remove skin if using rotisserie chicken.
  5. Mix in the Greek yogurt (or mayonnaise), Dijon mustard, and lime juice.
  6. Sprinkle in garlic powder, onion powder, and a pinch of salt and pepper, adjusting to taste.
  7. Add the finely chopped red onion and celery for crunch.
  8. If desired, mix in chopped fresh cilantro for added flavor.
  9. Gently combine all ingredients with a spatula until well mixed.
  10. Taste and adjust seasoning as needed.
  11. Rinse the large lettuce leaves under cold water and pat dry with a paper towel.
  12. Lay out the whole grain or spinach wraps on a clean surface.
  13. Scoop 1/2 to 3/4 cup of the avocado chicken salad onto the center of each wrap.
  14. Fold the sides of the wrap inwards over the filling, then roll it up tightly from the bottom, tucking in the sides as you go.
  15. Slice the assembled wraps in half diagonally for presentation.
  16. Arrange the wraps on a platter and scatter halved cherry tomatoes around for color.
