  • 1 tablespoon Lime Juice
  • For the Dipping Sauce: 2 Ripe Tomatoes
  • 1 Chipotle Pepper in Adobo
  • 1/4 Onion
  • 2 cloves Garlic
  • 1/2 cup Vegetable Broth
  • 1 tablespoon Lime Juice

Instructions

  1. Prepare Your Ingredients: Gather and finely mince your garlic and onion. Mince the chipotle peppers and set aside the adobo sauce. Chop your fresh cilantro.
  2. Mix the Donkey Ball Mixture: In a large mixing bowl, combine the ground beef, minced garlic, minced onion, minced chipotle peppers, 1 tablespoon of adobo sauce, ancho chili powder, cumin, Mexican oregano, panko breadcrumbs, beaten egg, salt, and black pepper. Mix gently until just combined.
  3. Form the Donkey Balls: Take about 1.5 to 2 tablespoons of the beef mixture and roll it into uniform balls, about 1 to 1.5 inches in diameter. Arrange them on a baking sheet lined with parchment paper and chill in the refrigerator for 15-20 minutes.
