A comforting Greek dish, Arakas Latheros combines fresh green peas, tender potatoes, and a rich tomato sauce, seasoned with aromatic herbs. It’s a versatile meal that can be enjoyed as a main or side dish, celebrating the flavors of simple ingredients.

  • 1 large onion, finely chopped
  • 2 medium tomatoes, chopped
  • 2 medium potatoes, peeled and diced
  • 1/4 cup olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt (adjust to taste)
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon sugar (to balance acidity)
  • 1/4 cup fresh parsley, chopped (for garnish)
  • 1 cup water or vegetable broth

Instructions

  1. Rinse the fresh green peas under cold water. If using frozen peas, they can go straight into the pot.
  2. Peel and dice the potatoes into small cubes, about 1-inch in size.
  3. Finely chop the onion using a sharp knife.
  4. Mince the garlic cloves, using a garlic press or chopping finely.
  5. Chop the tomatoes into small pieces or blend them into a puree for a smoother sauce.
  6. In a large pot or deep skillet, heat the olive oil over medium heat. Add the chopped onions and sauté for about 5-7 minutes until translucent and slightly golden.
  7. Add the minced garlic and sauté for an additional 1-2 minutes, being careful not to burn it.
  8. Stir in the chopped tomatoes and cook for about 5 minutes until they soften and release their juices.
  9. Add the dried oregano, salt, black pepper, and sugar. Stir well to combine.
  10. Add the diced potatoes, stirring them into the mixture, and let them cook for about 5 minutes.
  11. Pour in the water or vegetable broth, ensuring the potatoes are submerged. Bring to a gentle boil, then reduce heat to low. Cover and simmer for about 15 minutes, or until the potatoes are tender.
  12. Once the potatoes are tender, add the green peas. If using fresh peas, they will need about 5-7 minutes to cook; frozen peas can be added directly.
  13. Stir the peas into the pot, cover again, and let everything simmer for another 5-7 minutes.
  14. Taste and adjust seasoning if necessary.
  15. Remove from heat and let sit for a few minutes before serving.
  16. Sprinkle chopped fresh parsley over the top before serving.
  17. Serve warm, either on its own or with crusty bread, rice, or a simple salad.

Notes

  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. The flavors will develop further, making it even tastier the next day.
  • To reheat, warm in a pot over low heat, adding a splash of water or broth if it seems too thick.
