Apple Pie Cookies: A Delicious Twist on a Classic Dessert

  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 medium apple, peeled, cored, and diced (about 1 cup)
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • 1 tablespoon milk (for brushing)
  • Additional granulated sugar for sprinkling

Instructions

  1. In a medium bowl, whisk together the flour, baking powder, and salt.
  2. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar using an electric mixer on medium speed until light and fluffy (about 2-3 minutes).
  3. Add the egg and vanilla extract to the butter-sugar mixture and mix until well combined.
  4. Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined. Avoid overmixing.
  5. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes.
  6. Dice the peeled and cored apple into small pieces.
  7. In a medium bowl, toss the diced apples with lemon juice, cornstarch, cinnamon, and nutmeg. Set aside.
  8. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  9. Roll out the chilled dough on a lightly floured surface to about 1/4 inch thick. Cut out circles using a round cookie cutter (about 3 inches in diameter).
  10. Place about 1 tablespoon of the apple filling in the center of each circle.
  11. Fold the dough over the filling to create a half-moon shape, pressing the edges together to seal. Use a fork to crimp the edges.
  12. Place the assembled cookies on the prepared baking sheet, leaving space between each.
  13. Brush the tops with milk and sprinkle with granulated sugar.
  14. Bake in the preheated oven for 15-18 minutes, or until golden brown. Keep an eye on them as baking times may vary.
  15. Remove from the oven and let cool on the baking sheet for about 5 minutes before transferring to a wire rack to cool completely.
  16. Serve warm or at room temperature, optionally with vanilla ice cream or whipped cream.
  17. Store leftovers in an airtight container at room temperature for up to 3 days or freeze for up to 2 months.
