  • 1 cup sweetened condensed milk
  • 2 cups unsweetened shredded coconut
  • 1 teaspoon vanilla extract
  • 1 cup chopped almonds
  • 1 cup chocolate chips

Instructions

  1. In a large mixing bowl, combine 1 cup of sweetened condensed milk, 2 cups of unsweetened shredded coconut, and 1 teaspoon of vanilla extract. Mix well until all ingredients are thoroughly combined.
  2. Gently fold in 1 cup of chopped almonds into the mixture. Make sure they are evenly distributed; each snowball should have a bit of almond in it!
  3. Using your hands, take small portions of the mixture and roll them into 1-inch balls. Place them on a baking sheet lined with parchment paper.
  4. Once all the mixture is shaped into balls, place the baking sheet in the refrigerator for at least 30 minutes to firm up.
  5. While the snowballs are chilling, melt 1 cup of chocolate chips in a microwave-safe bowl in 30-second intervals, stirring in between until smooth.
  6. Remove the snowballs from the refrigerator. Dip each one in the melted chocolate, ensuring they are fully coated. Use a fork to lift them out and let the excess chocolate drip off.
  7. Return the coated snowballs to the parchment-lined baking sheet. If desired, sprinkle a bit of extra shredded coconut or finely chopped almonds on top before the chocolate sets.
  8. Place the baking sheet back in the refrigerator for another 30 minutes or until the chocolate is fully set.
