Ingredients

Scale
  • 2 large ripe but firm Hass avocados
  • 1 cup all-purpose flour
  • 2 large eggs
  • 12 tablespoons water or milk
  • 1 cup panko breadcrumbs
  • Salt
  • Black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • Cayenne pepper (optional)
  • Chili powder (optional)
  • Avocado oil spray or olive oil spray

Instructions

  1. Carefully halve the ripe avocados lengthwise and remove the pit.
  2. Gently scoop out the avocado flesh in one piece from each half.
  3. Slice each half into thick 'fries,' aiming for pieces about 1/2-inch wide and 3-4 inches long.
  4. Set up your breading station with three shallow bowls: one with seasoned flour, one with whisked eggs and water or milk, and one with panko breadcrumbs mixed with seasonings.
  5. Dredge each avocado fry in the seasoned flour, shaking off excess.
  6. Dip the floured fry into the egg wash, letting excess drip off.
  7. Coat the fry in the seasoned panko breadcrumbs, pressing firmly to ensure an even coating.
  8. Place the breaded fries on a clean plate or baking sheet, spaced out.
  9. Preheat the air fryer to 375°F (190°C) for about 5 minutes.
  10. Arrange the breaded avocado fries in a single layer in the air fryer basket, lightly spray the tops with cooking oil.
  11. Air fry for 8-12 minutes, flipping halfway through, until golden brown and crispy.
  12. Carefully remove the fries from the air fryer and sprinkle with extra salt if desired.
  13. Serve immediately with your favorite dipping sauce.
